Mexican Indigenous Rare Flavorful without Heat
Animal cookies, chocolate, chilies, raisins, plantains (like bananas), nut, herbs, spices and seeds. It may sound strange but it is absolutely fabulous with many health benefits!
If you have never experienced Mole it is an indigenous chocolate-chili sauce which is traditionally served over rice with chicken. Mole is not hot but it is very flavorful! I will be making Mole tomorrow and my 20 ingredients are measured out and ready to do!
The secret to making great Mole are it's peppers. Unless you live in the southwest you probably will not have access to thee peppers. Shepherdess Celeste grows these peppers in the Rocky Mountains of Montana! This is her way of supporting the indigenous peoples of Oaxaca, Mexico and helping to keep their traditional recipes alive.
For 2018, Shepherds Heart Farm is offering the following seeds:
- Chiuacle Negro
- Chiuacle Rojo
- Chiuacle Amarillo (substitution 2018, poor harvest)
- Pasilla Bajio
Additional peppers, that you may want to purchase through various pepper venues such as Refining Fire Peppers for your mole might be:
- New Mexico
